Keep steps 1-5 in the first workflow and put the remaining steps in a new workflow. In the new workflow, create an initiation form to collect the information you need. If you don't want to introduce 1 minute delay to your workflow before changing previously updated fields in your workflow (that should always work..) you may want to add Wait for Field Change in Current item action between updates of the same field.
